Skewers of Mozzarella di Bufala and strawberries with basil-infused olive oil.
Serves 4:

• 4 balls of Mozzarella di Bufala
• 8 small strawberries 
• 80 ml basil-infused olive oil 
• Fleur de sel
• Quinta de São Vicente olive oil
(For the basil-infused olive oil)
• 20 leaves of basil 
• 100 ml extra-virgin Quinta de São Vicente
olive oil
• Fleur de sel
1- Rinse and dry the basil leaves.
2- Put all the ingredients in a blender and liquidize.
3- The oil is now ready for use. It will keep in a closed bottle in the refrigerator for about two weeks or in the freezer for about two months without any real detrimental effect on the quality.

1- Slice the strawberries in half and set aside.

2- Cut the mozzarella in medium-sized slices and set aside. 

3- Assemble the skewers: start with half a strawberry, followed by a slice of mozzarella, repeat three times. Finish with half a strawberry.

4- Drizzle with the basil-infused olive oil and sprinkle with fleur de sel.
