Ceviche of bass with mango and onion

Serves 4:

• 400 gr. fillet of bass
• 60 gr. onion
• 2 red chillies
• 100 gr. mango
• 12 coriander leaves 
• Juice of 1 lime
• Juice of 1/2 lemon
• 50 ml fruity extra-virgin Quinta de São Vicente Premium olive oil
• Salt and pepper

 
1- Cut the bass in cubes of about 1.5 cm and place in the fridge

2- Slice the onion in very thin half moons. Remove the seeds from the chillies and chop the chillies finely. Slice the mango and chop the coriander leaves quite roughly.

3- Pour the lime and lemon juice over the fish, add the onion, the chopped chillies, the mango and the coriander and season with salt and pepper. Drizzle with the olive oil. Serve immediately.
